Pozole Mexican Stew

Pozole is a traditional Mexican stew that is been around for well over 100 years. It was traditionally made with pork and red sauce but different variations have been created over the years. It is a classic hangover cure and is served in most restaurants and homes all over Mexico but sadly enough, not many people in the States know about it. Our version of pozole is much healthier and fresh than the traditional style (not that there is anything wrong with the classic recipe). We use fresh lettuce and green serrano chile peppers for the sauce, hominy and shredded chicken breast topped off with fresh radish and dry oregano leaves to put the final touch of freshness. It’s a little spicy (depending on the spiciness of the green chile) but the lime and tostadas will help you complement this incredible comforting and healthy dish. ENJOY!!
